Pecan bars

It must be pecan season, either that or I have a slight addiction.

Crust

Combine the following in a bowl until well mixed and then spread on the bottom of a 9/13 baking pan. Bake at 350 degrees for 15 minutes.

2 cups of flour
1/2 cup of icing sugar (powdered/confectioners sugar)
1 cup of butter

Filling

Cream together:

1/2 cup sugar
3 eggs

Add:

1 cup light corn syrup
1 tsp vanilla
1/2 stick of butter (melted)
a pinch of salt
2 cups of pecans

When well mixed, pour over the baked crust and put back in the oven at 350 degrees for 30 minutes.

Pecan blondies

1 cup butter
2 cups brown sugar
2 eggs, beaten
2 tsp. Vanilla
1 1/4 cups flour
2 tsp baking powder
1/8 tsp salt
2 cups coarsely chopped pecans

1. Prepare baking pan. Grease 9x13 with shortening or butter (do not use spray).
Line with parchment paper and grease with butter. Set aside
2. In medium sauce pan, melt butter over low heat. Stir in brown sugar and continue to heat over low/medium heat. Stir constantly for about 5 minutes.
3. Add eggs and vanilla making sure to combine completely. Add flour, baking powder and salt, stir again. Fold in pecans.
4. Pour batter into prepared pan gently pushing batter to edges and corners
5. Bake in preheated 350 oven for 25-30mins.
6. Take out when top is crisp and edges are pulling away from the sides, don't over bake.
7. Cool completely. Once cooled, use the parchment paper and pull out of the pan and cut into squares.

Buttermilk Syrup

Buttermilk Syrup
 
 
I don't have picture of this but trust me when I tell you it is divine.
 
 
4 cups sugar
1 cup butter
2 cups buttermilk
2 tablespoons corn syrup
1 tsp baking soda
2 tsp vanilla
 
Mix all ingredients except vanilla in a tall heavy sauce pan. Boil over low heat for 5 minutes. Stir frequently. Remove from heat and add vanilla.
I didn't say this was healthy =)
 
We served this over white chocolate macadamia nut bread French Toast. Bread was found at Harmons. Just mix French toast mixture like normal.
 


Pecan pie

So I made my very first pie including crust for Thanksgiving. Pretty proud that it looked good and tasted amazing.

Use your favorite pie crust recipe
 Filling:
Cream Together:
1/3 cup butter
1/2 cup brown sugar
mix in 1 cup light corn syrup
add 3 slightly beaten eggs
1 tsp vanilla
mix well then stir in 1 cup pecans

Bake at 450 for 10 minutes, then turn oven to 300 and bake 30 plus minutes. There will be a slight jiggle to the pie but not a whole lot.  Serve with a scoop of vanilla ice cream.....yummy!

Chow Mein

This was so delicious! I remembered at the last minute to take a picture so I could blog it. Good thing I got it before it was gone.
 
1/2 c. soy sauce
2 Tbs brown sugar
4 cloves garlic, minced
2 tsp fresh ginger, grated
ground pepper, to taste
4-6 Tbsp. Canola oil
3 7.7 oz refrigerated Yaki Soba noodles. These are found in the produce section at Macey's
2/3 cup or more chopped celery
1 large onion, thinly sliced
4 cups or one bag shredded cabbage
 
Instructions:
* In a small bowl combine soy sauce, brown sugar, garlic, ginger and black pepper. Set aside.
* Remove Yaki Soba from the package and discard included flavoring packets. Rinse noodles well, drain and set aside.
* Heat oil in a large wok or skillet. Add celery and onion and sauté until tender. Add cabbage and sauté an additional 3 minutes or so.
*Toss Yaki Soba noodles and soy sauce mixture with the vegetables over medium-high heat for an additional 2-3 minutes or until noodles are heated through.

I love this cookbook

I got this cookbook for Christmas, and I recommend it to everyone. I have tried several different recipes and have loved them all. I actually saw them at a cooking show at Thanksgiving Point and wanted the cookbook then but ended up forgetting about it. So glad my Aunt bought this for me.

Our Favorite Sugar Cookie Recipe

 
This is our go to sugar cookie recipe that I thought I would share. These cookies are soft and so so yummy!

6 1/2 cups flour
2 tsp baking soda
2 cups sugar
1 cup butter softened
1 tsp salt
2 eggs
1 cup sour cream

Sift flour, soda and salt together. In a large bowl mix remaining ingredients and beat for 2 minutes. Add to the flour mixture and mix until well combined. Roll out on floured surface to about 1/4 inch thick. Bake at 375 for 10 minutes

Frosting:

1/3 cup butter, softened
4 1/2 cups powdered sugar
1/4 cup milk
1/2 tsp vanilla
1/2 tsp almond extract
food coloring.

Mix all ingredients together and beat well.
