Pecan blondies

1 cup butter
2 cups brown sugar
2 eggs, beaten
2 tsp. Vanilla
1 1/4 cups flour
2 tsp baking powder
1/8 tsp salt
2 cups coarsely chopped pecans

1. Prepare baking pan. Grease 9x13 with shortening or butter (do not use spray).
Line with parchment paper and grease with butter. Set aside
2. In medium sauce pan, melt butter over low heat. Stir in brown sugar and continue to heat over low/medium heat. Stir constantly for about 5 minutes.
3. Add eggs and vanilla making sure to combine completely. Add flour, baking powder and salt, stir again. Fold in pecans.
4. Pour batter into prepared pan gently pushing batter to edges and corners
5. Bake in preheated 350 oven for 25-30mins.
6. Take out when top is crisp and edges are pulling away from the sides, don't over bake.
7. Cool completely. Once cooled, use the parchment paper and pull out of the pan and cut into squares.
